Pavyllon: Yannick Alléno’s new book brings readers to the counter

“I was born behind a counter.” That childhood connection provides the starting point for Pavyllon Yannick Alléno – Londres, Paris, Monaco, published by Glénat on October 21.

Written with Jean-Paul Frétillet and photographed by Nicolas Lobbestaël, the book follows the chef’s three Pavyllon restaurants through their cuisine and everyday life. The counter is central to that story, bringing guests close enough to watch a dish being finished and speak with the people preparing it.

Each destination gives the book a different culinary direction. Monaco contributes Mediterranean influences, London includes breakfast dishes and a particular focus on eggs, while Paris draws on French regional produce and traditions. Around fifty recipes, adapted for home cooks, accompany these accounts, together with short, humorous observations from life around the counter. The shared name connects restaurants whose menus respond to their own surroundings.
