Some dinners unite chefs through proximity; others bring together minds that have never accepted the established boundaries of a meal. On September 21, Xal and the Apapaxoa Festival GastroCultural Xcaret will gather Andoni Luis Aduriz, Rasmus Munk and Antonio Bachour around the same table. Three figures from different culinary disciplines, connected by a shared instinct: using technique as a point of departure rather than a destination.
At Mugaritz, Andoni Luis Aduriz has spent decades questioning the nature of the dish and the role of the person eating it. Through Alchemist, Rasmus Munk has expanded dinner into an immersive narrative in which food, image and social reflection occupy the same space. Antonio Bachour approaches pastry with equal precision, transforming colour, architecture and texture into a language that can be understood before the first bite. Each has opened a different territory within contemporary gastronomy.
Their encounter at Xal will therefore bring together three distinct relationships with creation: the conceptual, the immersive and the sensorial. For one evening, Apapaxoa will place them within the same experience—not to erase their differences, but to observe what happens when three chefs accustomed to pushing their own discipline begin to work across its borders.
