On December 5, at Ikoyi, the word exceptional will regain its meaning. One of London’s most closely watched restaurants will welcome only twenty guests for a menu created by Jeremy Chan around N25 Caviar, three vintages of Champagne Salon and twelve wines from Domaine de la Romanée-Conti. The concentration of rarity alone places the evening in a category of its own.
Salon will be served in 2015, 2007 and 1999 vintage as three expressions of a champagne produced only in years the house considers worthy, with fewer than forty-five vintages declared in more than a century. Domaine de la Romanée-Conti will follow through Corton-Charlemagne, Montrachet, Échezeaux, Grands Échezeaux, Richebourg, Romanée-Saint-Vivant and La Tâche, with several 2022 and 2007 vintages tasted side by side. Romanée-Conti 2007 will complete a sequence that most collectors would struggle to encounter across a lifetime, let alone during a single dinner.
For this evening, Jeremy Chan will work from the cellar towards the kitchen. The wines have been chosen first; every dish will be composed around their character, age and evolution. Cristian Rimoldi, director of Salon, and Joe Muller of Corney & Barrow will accompany the tasting, giving twenty connoisseurs the opportunity to understand these bottles as deeply as they experience them. Priced at £5,850 per person, this very exclusive dinner is held in a restaurant capable of meeting the weight of such a collection and is perhaps one of those evenings whose exact constellation will never exist again.
