On September 18 and 19, Jason Liu will welcome Gaggan Anand to Ling Long Shanghai for a collaboration built around a deceptively simple proposition: what happens when two chefs shaped by Asia stop treating “the East” as a single culinary territory? The dinner, titled Two Worlds, One Taste, will bring Shanghai and Bangkok together without asking either kitchen to surrender its identity.
At Ling Long, Jason Liu constructs a contemporary expression of Chinese cuisine through memory, regional ingredients and techniques allowed to evolve beyond their customary forms. Gaggan approaches Indian cooking with a different energy, replacing reverence with provocation and turning the tasting menu into a sequence driven by instinct, emotion and play. His Bangkok restaurant returned to the top of Asia’s 50 Best Restaurants in 2025, making him the first restaurateur to reach No. 1 in the region five times. Jason Liu’s Ling Long, meanwhile, has established itself among Shanghai’s most closely watched restaurants, earning a Michelin star and a place in Asia’s 50 Best Restaurants.
The interest of their encounter does not lie in finding an easy midpoint between China and India. It lies in allowing two independent languages to interrupt, challenge and extend one another. Jason Liu brings structure, memory and a developing vision of modern Chinese identity; Gaggan brings disruption and the conviction that pleasure often begins when control loosens. For two nights, their menu will treat collaboration as improvisation and the East not as a direction, but as a multitude of tastes still being defined.
