Les Grandes Tables du Monde Expands Its Map with 23 New Members for 2027

The next chapter of Les Grandes Tables du Monde began in Mallorca. On October 12, during the opening of the association’s annual Congress, 23 restaurants were announced as the new members of the 2027 promotion. The gathering, running from October 12 to 15, brings the community together on an island whose own food culture makes an appropriate setting for a conversation about where fine dining is heading next: a place where tradition, Mediterranean identity and a new generation of restaurants continue to meet.

The 2027 intake is particularly interesting for its breadth. Twenty-three restaurants across 13 countries enter the collective, from Germany, France and the Netherlands to Portugal, Spain, Switzerland, Italy, Belgium and Luxembourg, while the United States, the United Kingdom, Thailand and Turkey extend the map further. Some are already established international destinations; others represent a newer generation of restaurants developing their identity away from the traditional centres of European gastronomy. Together, they make the new promotion less about a single idea of fine dining than about the different forms it can now take.

What makes the announcement relevant is not simply that the collective is growing. The list suggests an organisation continuing to broaden the geography and vocabulary of what it considers a great restaurant. Some of these houses are built around a powerful chef identity, others around the restaurant as a complete expression of hospitality. Some belong to established gastronomic destinations, while others help create new ones. That diversity fits naturally with the purpose of the Mallorca Congress itself: bringing restaurateurs together not only to celebrate what already exists, but to exchange, question their profession and consider what the next generation of great restaurants might look like.

The 2027 promotion also says something about the way a gastronomic community renews itself. It does not need every new member to resemble the houses that came before. Its strength may lie in the opposite: allowing different generations, cultures and restaurant models to enter the same conversation while preserving the idea that connects them – that a great table is defined as much by the way it receives as by what it serves.
