RAGA: Gaggan Anand Brings His Culinary Journey Back to India

Gaggan Anand has opened Raga on Janpath Road in New Delhi, bringing to India the culinary approach he developed over years in Bangkok. Welcoming guests since August 26, 2026, the restaurant is a collaboration with restaurateur Zorawar Kalra and chef Rydo Anton, whose name supplies its first syllable: RA for Rydo Anton, GA for Gaggan Anand. That shared name gives a longstanding working relationship a permanent address in the Indian capital, where Anand’s return comes with the experience of two decades spent abroad.

Born in Jakarta, Rydo Anton has worked alongside Gaggan Anand for around ten years and serves as the group’s executive chef. Together, they have developed a tasting menu that revisits Indian flavours through the techniques and influences gathered along the way. The opening menu unfolds across 22 dishes, including an adaptation of Anand’s Yoghurt Explosion, a tribute to the Bombay sandwich and bhetki paturi with mustard, kaffir lime and green chilli. These references place regional cooking and everyday food within a meal that leaves considerable room for surprise.

Raga seats 42 guests, with a five-seat counter facing the kitchen alongside the main dining room. The format preserves the extended tasting experience associated with Anand’s restaurants, while bringing it to guests for whom many of its culinary references will already be familiar. That familiarity gives the Delhi opening its particular interest: flavours explored and transformed abroad are now being served in the country that first shaped them. Reservations are available through the restaurant’s website.
