Josh Niland joins Rafael Osterling for a lunch in Lima

Josh Niland and the Saint Peter team will join Rafael Osterling at Rafael in Lima for a special lunch on November 4, 2026. Part of The 50 Signature Sessions, the collaboration brings the Sydney restaurant’s approach to whole-fish cookery into Osterling’s restaurant in Lima’s Miraflores district.

At Saint Peter, Niland has developed a way of working with seafood that draws on techniques more commonly associated with meat. Dry ageing, precise butchery and the use of fish offal allow him to explore parts of the catch that rarely reach the dining room. Those methods shape menus that change with the fish available each day.

Osterling’s cooking at Rafael brings Peruvian ingredients together with Italian and Japanese influences, informed by experience in Paris and London. For this lunch, the two teams will build their menu around a shared interest in seafood and the handling of produce. The encounter forms part of a wider programme of collaborations hosted by Lima restaurants from November 1 to 5.
