Mitsuharu Tsumura’s Maido prepares to join the Best of the Best

Maido, the Lima restaurant led by Mitsuharu Tsumura, will join the Best of the Best at the 50 Best Restaurants ceremony on November 4, 2026. Named The World’s Best Restaurant in 2025, the restaurant will enter the group reserved for former number ones as Peru hosts the global awards ceremony for the first time.

Born in Lima to a family of Japanese descent, Mitsuharu Tsumura opened Maido in 2009 after studying culinary arts in the United States and training in Osaka. His cooking brings Japanese technique together with Peruvian ingredients through Nikkei cuisine, with an increasing interest in the products and food traditions of the Amazon. That approach has developed across both the restaurant’s tasting menu and its à la carte offering.

The Best of the Best category gives previous winners a permanent place within the organisation while making them ineligible for subsequent annual rankings. Maido will join Central, named The World’s Best Restaurant in 2023, giving Lima a second representative in the group. Its transition will accompany the announcement of a new number one during the ceremony in its home city.
