Julien Royer will return to Louise in Hong Kong on November 12 and 13, 2026, for two dinners with executive chef Loïc Portalier. The chef behind Singapore’s three-Michelin-starred Odette will join the team of the restaurant he co-founded 7 years ago with Yenn Wong and JIA Group, presenting a menu built around French culinary traditions and seasonal ingredients.
Set in a two-storey heritage building within PMQ in Central, Louise gives Julien Royer’s cuisine a different setting from Odette. Its dining room, designed by André Fu, reflects the atmosphere of a private home. Loïc Portalier leads a kitchen that works with ingredients sourced locally and internationally, maintaining the restaurant’s focus on French cooking across its dining room and terrace.
For the collaboration, the announced menu includes scallop with vichyssoise and caviar, Parmesan agnolotti with orange and saffron, and a Grande Tradition pie of pigeon, Bresse chicken and foie gras. Head pastry chef Eve Minialai will close the meal with yoghurt, honey and walnut, followed by clementine with grilled chestnut and hazelnut praliné.
