Tom Sellers opens The Penn at Stoke Park

Tom Sellers has opened The Penn at Stoke Park in Buckinghamshire, welcoming its first guests on October 26, 2026. Created with Dom Robinson, Tom Phillips and the HiStory Hospitality team, the restaurant introduces a 48-cover dining room and a private table for eight as part of the estate’s wider relaunch.

The à la carte menu draws on British culinary history and classical French technique, with ingredients supplied by the estate’s kitchen garden. Kate Nannery, previously a senior kitchen gardener at Le Manoir aux Quat’Saisons, oversees the vegetables, herbs and leaves grown for the restaurant. That connection with the grounds gives the kitchen a seasonal supply within the estate itself.

Named after John Penn, who helped shape Stoke Park, the restaurant occupies interiors designed by Studio Shayne Brady. Sellers, whose Restaurant Story in London holds two Michelin stars, also oversees the estate’s wider food and drink offering with Robinson. The Penn serves lunch and dinner daily and is open to guests visiting specifically for a meal.
