Allen Suh will welcome Marc Mantovani to Restaurant Allen in Seoul for a collaborative dinner on November 14, 2026. The executive chef of Hong Kong’s Cristal Room by Anne-Sophie Pic will join Suh for the Seoul chapter of a two-city exchange, bringing the teams of the two-Michelin-starred restaurants together around a shared menu.
Founded in 2021, Restaurant Allen approaches contemporary French cooking through Korea’s ingredients and four seasons. Allen Suh works with farmers, fishermen and artisanal producers across the country, building his menus around what is available at its seasonal peak. French techniques support that exploration of local produce, guided by the chef’s philosophy of Le Goût du Terroir.
At le Cristal Room, which opened in Hong Kong in November 2023, Marc Mantovani interprets Anne-Sophie Pic’s culinary approach through aromatic combinations and her concept of Suffusion. The 40-seat restaurant is a collaboration with Baccarat and Leading Nation Hospitality. The dinner in Seoul will bring that experience into Suh’s kitchen, continuing the exchange between the two teams.
