Santiago Lastra joins Jaime Pesaque at Sapiens in Lima

Santiago Lastra and Jaime Pesaque will cook together at Sapiens in Lima on November 5, 2026, as part of The 50 Signature Sessions. The dinner will combine Mexican and Peruvian influences through local ingredients, seafood and citrus, with the host restaurant’s cooking over fire providing the basis for the collaboration.

At Kol, which opened in London in 2020, Santiago Lastra develops Mexican cuisine with predominantly British ingredients. That approach involves adapting familiar preparations to what is available locally, including using sea buckthorn where a dish might call for lime. In Lima, the announced menu will give the Mexican chef a different range of seasonal produce to work with alongside Jaime Pesaque.

J’aime Pesaque opened Sapiens in San Isidro in 2021, developing a cuisine organised around different grills and fuels, including wood, charcoal and corn cobs. Vegetables, seafood and rice feature alongside meat in that work. The November 5 dinner will bring Santiago Lastra into this setting for one evening, as the two chefs prepare a shared menu using ingredients sourced in Peru.
